What You Need
Original recipe yields 48 servings
1 pkg. (8.8 oz.) European-style cookies for coffee (speculoos cookies), broken into pieces
Process process cookies, carrots and nuts in food processor until coarsely ground.
Add cream cheese; pulse until blended.
Cover rimmed baking sheet with wax paper. Shape cream cheese mixture into 48 (3/4-inch) balls; place on prepared baking sheet. Freeze 10 min.
Melt chocolate as directed on package. Add oil; mix well. Tint with food coloring as desired. Dip cookie balls, one at a time, into chocolate. Gently shake cookie ball to remove excess chocolate; return to baking sheet. Sprinkle with coconut.
Refrigerate 1 hr. or until firm.
How to Melt the Chocolate
Break chocolate into small pieces; place in microwaveable bowl. Microwave on HIGH 2-1/2 min. or until chocolate is completely melted when stirred, stirring every 30 sec.

How to Prevent Cream Cheese Mixture from Sticking to Your Hands
Lightly coat the palms of your hands with cooking spray before using to shape the cream cheese mixture into balls.
For best results, the cream cheese needs to be "right-from-the-refrigerator" cold before using to prepare the cookie ball "dough" as directed. Also, to prevent the cookie balls from softening and losing their shape, remove them from the freezer in batches before coating them with the melted chocolate.

Prepare cream cheese mixture and shape into balls as directed. Flatten balls slightly, then press thumb into center of each ball to resemble nest. Freeze 10 min. Dip nests in melted chocolate and refrigerate as directed. Fill indentations with jelly beans in addition to the coconut just before serving.
