Combine graham crumbs, butter and 1 Tbsp. sugar. Press onto bottoms of 12 muffin pan cups sprayed with cooking spray, adding about 1 Tbsp. crumb mixture to each cup. Place in freezer until ready to use.
Add boiling water to gelatine in small bowl; stir 2 min. or until completely dissolved.
Beat cream cheese, vanilla and remaining sugar in large bowl with mixer until blended. Gradually add gelatine, mixing well after each addition. Stir in COOL WHIP.
Measure 1 cup batter into each of 2 separate bowls. Tint batter in each of the 3 bowls with different color food coloring. Spoon 1 color batter over crusts, adding about 1 Tbsp. batter to each muffin cup. Repeat with remaining batters to make 2 additional layers of batter.
Freeze 2 hrs. or until firm. Let cheesecakes stand at room temperature about 1 hour before serving to soften slightly.

How to Soften Cream Cheese
Place completely unwrapped package of cream cheese in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened. Add 15 sec. for each additional package of cream cheese.

Dip tip of small offset spatula or butter knife into hot water, then run spatula around edge of each cheesecake before gently lifting cheesecake from pan.
Gel food coloring is highly pigmented, so a little goes a long way. The more you use, the deeper the color. Use a toothpick to stir the food coloring into each of the batters to get the desired shade of batter.
