What You Need
Original recipe yields 8 servings
3 cups frozen corn
2 cans (4.5 oz. each) chopped green chiles, undrained
Combine corn, chiles, garlic, cumin and 1 cup cheese in slow cooker sprayed with cooking spray; stir in chicken broth. Add chicken. Cover with lid.
Cook on LOW 6 to 7 hrs. (or HIGH 3 to 4 hrs.).
Transfer chicken thighs to shallow dish; pull into shreds with 2 forks. Set aside. Ladle about 2 cups chowder into blender; blend until smooth. Return to slow cooker along with the chicken and whipping cream; stir.
Serve topped with sour cream and remaining cheese.
Top with chopped fresh cilantro and/or chili powder before serving with a bowl of lime wedges on the side.
Pair this creamy soup with fresh crusty bread or a side salad.
This recipe uses 3 cups of chicken broth which is less than what you would get from a 32-oz. carton or 2 (14.5-oz.) cans of broth. If you have any leftover broth, you can refrigerate or freeze it until ready to use as desired. Suggestions include adding it to your pasta cooking water for more flavor, or substituting it for some of the water when preparing a savory sauce.
