1 head garlic
1 Tbsp. oil
2 lb. Yukon Gold potatoes (about 6), peeled, cut into 2-inch cubes
1/4 cup tightly packed fresh parsley, chopped

Heat oven to 375°F.

Cut 1/4-inch-thick slice off top of garlic head to expose tops of cloves; place garlic, cut side up, on sheet of foil. Drizzle with oil; wrap in foil. Place in shallow pan.

Roast 45 min. or until garlic is tender.

Meanwhile, cook potatoes in large saucepan of boiling water 20 min. or until tender; drain. Return potatoes to pan. Beat with mixer until desired consistency.

Squeeze cloves from garlic head into small bowl. Add 1 tsp. bouillon powder; mix well. Add to potatoes along with sour cream, parsley and remaining bouillon powder; mix well.

Variation
Instead of using an electric mixer to mash the potatoes, you can instead mash them with a hand masher. Cook potatoes as directed, then drain, reserving 1 cup of the cooking water. Return potatoes to saucepan; mash with potato masher or fork. Add prepared garlic paste, sour cream, parsley and remaining garlic powder; mix well. Gradually stir in reserved potato cooking water until potatoes are of desired consistency.
