What You Need
Original recipe yields 8 servings
1-1/2 lb. sweet potatoes (about 3), each cut into 8 wedges
Toss potatoes with dressing and lime zest in bowl; spread onto bottom of parchment-covered rimmed baking sheet.
Roast 30 min. or until potatoes are tender, turning after 15 min. Meanwhile, mix mayo, sour cream, chives and garlic until blended.
Place potatoes in serving bowl. Sprinkle with paprika; toss lightly.
Serve with chive mayo for dipping.
For a touch of savory flavor, prepare using smoked paprika.
If you can only find large sweet potatoes, cut them into about 1/2-inch thick sticks instead of the wedges before tossing them with the dressing and lime zest and baking as directed. If necessary, increase the baking time until potatoes are tender.
