What You Need
Original recipe yields 32 servings
2 cups finely chopped watermelon rinds (green parts removed)
Combine all ingredients except red onions in medium saucepan.
Bring to boil on medium heat, stirring frequently; simmer on medium-low heat 8 to 10 min. or until most of the liquid is cooked off, stirring frequently. Cool completely.
Stir in red onions before serving.
How to Store
Store in airtight container in refrigerator up to 3 days before serving.
For a touch of heat, substitute seeded jalapeño peppers for the green bell peppers.
