Mix 2 Tbsp. sugar and 1 tsp. cinnamon until blended; reserve for later use. Combine flour, baking soda and salt.
Beat egg, bananas, mayo and vanilla with remaining sugar and cinnamon in large bowl with whisk until blended. Add flour mixture; stir just until moistened.
Pour into greased and floured 9x5-inch loaf pan; sprinkle with reserved sugar mixture.
Bake 1 hour or until toothpick inserted in center comes out clean. Cool bread in pan 10 min. Remove from pan to wire rack; cool completely.
