Original recipe yields 6 servings
2 lb. bone-in chicken pieces (thighs and legs)
1 cup (half of 5.46 oz. can) coconut milk
2 cloves garlic, minced
1 Tbsp. ground turmeric
2 tsp. Thai yellow curry paste
1 tsp. ground ginger
3 cups snow peas, trimmed, blanched
2 Thai red chiles, sliced

Heat oven to 375°F.

Place chicken pieces, skin sides up, in shallow baking dish sprayed with cooking spray.

Whisk all remaining ingredients except snow peas and chiles until blended; pour over chicken. Turn to evenly coat both sides of each chicken piece with coconut milk mixture.

Bake 40 to 45 min. or until chicken is done (165ºF), adding peas and chiles to the baking dish for the last 3 min.

Tip 1
How to Blanch the Snow Peas
To blanch the snow peas, add the trimmed fresh snow peas to large pan of boiling water. Cook 1 to 2 min. or until peas are bright green in color. Drain, then immediately plunge snow peas into bowl of ice water to stop the cooking process. Let stand until peas are cooled. Drain, then use as desired.
Tip 2
Use Caution When Handling Chile Peppers
When handling fresh or dried chile peppers, never touch your eyes, nose or mouth, and use disposable gloves to protect your skin. If you don't have gloves, wash your hands with soap and warm water immediately after handling the peppers. If you feel a burning sensation in your hands afterward, cleanse with a baking soda and water paste, then rinse with warm water.
