Heat greased grill for indirect grilling: Light one side of grill, leaving other side unlit. Close lid; heat grill to 350°F.
Combine dressing mix, dry seasonings and 1 Tbsp. sugar. Spoon 2 Tbsp. seasoning mix into medium bowl. Add mayo, vinegar, 2 Tbsp. cheese and remaining sugar; mix well. Refrigerate until ready to use.
Sprinkle remaining seasoning mix evenly over chicken; place on grate over unlit area. Cover; grill 50 min., monitoring for consistent grill temperature and turning chicken after 25 min.
Move chicken to grate over lit area of grill; brush with half the mayo mixture. Grill 3 to 5 min. on each side or until chicken is done (165°F) and crisp on both sides, brushing with remaining mayo mixture and sprinkling with remaining cheese after chicken is turned.
Starting to grill the chicken drumsticks over indirect heat helps to minimize flair-ups. Then finish grilling the chicken over direct heat helps to crisp up the skin.

Every kitchen should have an instant-read thermometer, preferably a digital model. A good thermometer can be used for everything from checking meat for doneness to checking the temperature of fryer oil or cooked sugar.
