4 mixed red, yellow and green peppers, cut lengthwise in half, seeded
1/4 cup loosely packed fresh parsley, chopped, divided
Place pepper halves, cut sides up, in 13x9-inch baking dish sprayed with cooking spray; cover.
Bake 20 min. Meanwhile, combine half the parsley with all remaining ingredients except cheese.
Spoon chicken mixture into pepper halves.
Bake, uncovered, 8 to 10 min. or until chicken mixture is heated through.
Sprinkle with cheese and remaining parsley.
