Cover rimmed baking sheet with foil; spray with cooking spray. Mix wing sauce and mayo until blended.
Add to cauliflower in large bowl; mix lightly.
Spread onto prepared baking sheet.
Bake 18 to 20 min. or until cauliflower is tender, stirring after 10 min. Sprinkle with cheese.
Serve with dressing.
Substitute KRAFT ROKA Blue Cheese Dressing for the ranch dressing.
Serve with celery sticks and/or bell pepper strips.
