Bring quinoa and milk to boil in medium saucepan on high heat, stirring constantly. Cover; simmer on medium-low heat 12 to 15 min. or until quinoa is tender. Remove from heat.
Add cocoa powder, vanilla and 2 Tbsp. maple syrup; mix well.
Serve topped with fruit, coconut and remaining syrup.
