1-1/2 cups graham cracker crumbs
1/4 cup butter, melted
1-1/4 cups sugar, divided
1 Tbsp. vanilla
4 eggs
3/4 cup canned pumpkin
2-1/2 tsp. pumpkin pie spice, divided
3/4 cup whipping cream

Heat oven to 325°F.

Combine graham crumbs, butter and 2 Tbsp. sugar; press onto bottom of 9-inch springform pan. Bake 10 min.

Meanwhile, beat cream cheese, vanilla and 1 cup of the remaining sugar in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended.

Pour half the batter into separate bowl; stir in pumpkin and 2 tsp. pumpkin pie spice. Pour portions of each batter alternately over crust in center of pan to create a bull's-eye design.

Bake 55 min. to 1 hour or until center is almost set. Run knife around rim of pan to loosen cake. Cool completely. Refrigerate 4 hours.

Beat whipping cream with remaining sugar and pumpkin pie spice in clean bowl with mixer on high speed until stiff peaks form. Serve over cheesecake.

Check cheesecake doneness by gently shaking the pan. If the cheesecake is done, it will be set except for a small area in the center that will be soft and jiggly. Do not insert a knife into the center as this may cause the cheesecake to crack during cooling.
