Cover rimmed baking sheet with foil; spray with cooking spray. Toss vegetables with half each of the lime juice, oil and fajita seasoning mix; spread onto prepared baking sheet.
Bake 12 min. Meanwhile, toss shrimp with remaining lime juice, oil and seasoning mix.
Use large spoon to push vegetables to one side of baking sheet. Spread shrimp onto other side of baking sheet. Bake 6-8 min. or until shrimp are tender.
Spoon shrimp mixture onto tortillas; top with vegetables, sour cream and cilantro.
