What You Need
Original recipe yields 12 servings
1-1/4 cups flour
1 cup old-fashioned or quick-cooking oats
1 Tbsp. CALUMET Baking Powder
1 tsp. pumpkin pie spice
1/2 cup plus 1 Tbsp. sugar, divided
1 container (8 oz.) BREAKSTONE'S or KNUDSEN Sour Cream
1/2 cup apple juice
3 Tbsp. oil
1 Granny Smith apple, peeled, chopped

Let's Make It
Heat oven to 400°F.
Combine flour, oats, baking powder, pumpkin pie spice and 1/2 cup sugar in large bowl.
Whisk egg, sour cream, apple juice and oil until blended. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in apples.
Spoon into 12 paper-lined muffin cups.
Bake 18 to 20 min. or until toothpick inserted in centers comes out clean. Sprinkle with remaining sugar. Cool in pan 5 min. Remove to wire rack; cool completely.
Store any leftover muffins in airtight container at room temperature up to 3 days. Or for longer storage, place muffins in freezer-weight resealable plastic bag; freeze up to 6 months. If frozen, thaw at room temperature before serving.
Substitute ground cinnamon for the pumpkin pie spice.
