Toss apples with dry pudding mix in large bowl. Add water; mix lightly. Spoon into slow cooker sprayed with cooking spray.
Combine oats, brown sugar, flour and cinnamon in large bowl. Add butter and vanilla; mix well. Spoon over apple mixture; cover with lid.
Cook on LOW 4 hours (or on HIGH 2 hours).
Serve topped with COOL WHIP.
