What You Need
Original recipe yields 8 servings
2 small zucchini, cut lengthwise in half
1 French bread baguette (12 inch), cut lengthwise in half
1/4 cup olive oil
1 English cucumber, cut lengthwise in half, then sliced crosswise
1/2 cup TACO BELL® Verde Salsa
1/4 cup chopped Italian parsley
1/4 cup halved pimento-stuffed green olives, (about 6)

Let's Make It
Heat grill to medium high heat.
Brush cut sides of zucchini and bread with oil.
Grill zucchini 3 to 4 min. on each side or until tender. Remove from grill; cool. Meanwhile, grill bread 1 to 2 min. on each side or until golden brown on both sides. Cool 5 min.
Combine cucumbers, salsa, parsley and olives in large bowl. Cut zucchini into 1/4-inch-thick slices, then cut bread into 1-inch pieces. Add zucchini and bread to salad just before serving; mix lightly.
Coarsely chop 2 Tbsp. capers; use instead of the olives.
