Add potatoes, cheese and bacon bits; mix well. Cover with lid.
Cook on LOW 3 to 4 hours (or on HIGH 1 to 2 hours), stirring after each hour.
Sprinkle with onions before serving.
How to Soften the Neufchatel Cheese
Place completely unwrapped package of Neufchatel in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened.
Serve with a mixed green salad and whole wheat roll to round out the meal.
