What You Need
Original recipe yields 4 servings
4 small zucchini
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
1 Tbsp. milk
1 tsp. garlic powder
1 tsp. dried Italian seasoning
1 red pepper, chopped
1 small onion, finely chopped
1/4 cup chopped PLANTERS Mixed Nuts

Heat oven to 375°F.
Cut zucchini lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells. Place shells in 9-inch square baking dish. Chop zucchini pulp.
Mix Neuchatel, milk and seasonings until blended. Add zucchini pulp, peppers and onions; mix well. Spoon into zucchini shells; sprinkle with nuts.
Bake 35 min. or until heated through and tops are lightly browned.
Enjoy this flavorful, crunchy side dish with a serving of roasted lean meat or poultry and whole-grain rolls.
Prepare zucchini shells and filling as directed; cover and refrigerate up to 24 hours. When ready to serve, fill zucchini shells with vegetable mixture; sprinkle with nuts. Bake as directed.
