Mix broth and mustard until blended; pour over ingredients in slow cooker. Sprinkle with tapioca, Italian seasoning and pepper. Top with chicken; cover with lid.
Cook on LOW 7 to 8 hours (or on HIGH 3-1/2 to 4 hours).
Serve over hot cooked pasta or rice.
