Combine the crushed graham crackers and brown sugar in a medium bowl, then stir in melted butter. Press mixture onto the bottoms of 16 serving dishes (about 6 oz. each). Place in fridge to set for at least 30 minutes.
In the bowl of a stand mixer, beat the cream cheese and lemon juice together on medium until no lumps remain. Add heavy cream and beat 2 to 3 min. or until thick, starting on low speed and increasing speed to medium. Add granulated sugar and beat on medium-high until stiff.
Pour mixture over chilled crust, and use a spoon to level. Chill at least 4 hours.
Top cheesecakes with desired toppings just before serving.
