Cook cauliflower in saucepan of boiling water 7 min. or until tender; drain well. Pat dry with paper towels; place in large bowl.
Mash cauliflower. Add egg and cheese; mix until blended. Roll into 24 balls, using about 1 Tbsp. cauliflower mixture for each. Shape each into oblong-shaped nugget.
Cover baking sheet with foil; spray with cooking spray. Empty coating mix into pie plate. Add cauliflower nuggets, 1 at a time, to coating mix, turning to evenly coat each nugget. Place on prepared baking sheet.
Bake 15 min. or until heated through, turning after 7 min. Meanwhile, heat marinara sauce as directed on label.
Serve cauliflower nuggets with marinara sauce.
Buffalo Cauliflower Nuggets
Omit Parmesan cheese and marinara sauce. Prepare recipe as directed, using SHAKE 'N BAKE Crispy Buffalo Seasoned Coating Mix. Serve with KRAFT Classic Ranch Dressing.
