Meanwhile, melt butter in medium skillet on medium heat. Add onions; cook 6 to 8 min. or until crisp-tender, stirring occasionally. Remove from heat.
Place potatoes in large bowl. Add sour cream, cheese, vinegar and sage; mash to desired consistency. Stir in onions and 1/3 cup bacon. Sprinkle with remaining bacon.
For a Less Bold Flavor
Decrease vinegar to 1-1/2 tsp.
Garnish with fresh sage leaves before serving.
