There are other recipes for chipotle mashed potatoes out there. But this creamy, cheesy version made with Yukon golds and sweet potatoes is the best.
What You Need
Original recipe yields 12 servings
1-1/2 lb. Yukon gold potato es (about 6), peeled, cubed
1-1/2 lb. sweet potatoes (about 3), peeled, cubed
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, softened
2 Tbsp. butter, softened
1/4 tsp. ground black pepper
1/2 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1/2 cup KRAFT Mexican Style 2% Milk Finely Shredded Four Cheese
1 Tbsp. finely chopped chipotle peppers in adobo sauce
2 green onions, sliced

Heat oven to 350°F.
Cook potatoes in boiling water 15 min. or until tender.
Drain potatoes; return to pan. Mash potatoes, gradually stirring in Neufchatel, butter and black pepper. Stir in sour cream, shredded cheese and chipotle peppers. Spoon into 2-qt. casserole sprayed with cooking spray.
Bake 30 to 35 min. or until heated through. Sprinkle with onions.

To test potatoes for doneness, insert a fork deep into the centers of the potatoes - there should be no resistance.
