Cut each pastry sheet into 4 squares; place on parchment-covered baking sheets.
Toss fruit with dry gelatin mix; spoon onto centers of pastry squares. Brush edges of pastry lightly with egg. Fold each pastry square diagonally in half; seal edges with fork. Brush tops with remaining egg; sprinkle with sugar.
Bake 20 min. or until puffed and golden brown, turning and reducing oven temperature to 375ºF after 10 min. Cool slightly.
Prepare Fresh Fruit As You Need It
Wash and prepare each batch of fresh fruit as you need it. The quality of fruit deteriorates rapidly once washed and prepared, even if refrigerated.
Have fun with your kids by making these fun treats together. Then use the pies to teach them about portion control.
Selecting & Storing Fresh Berries
Look for firm, plump berries that are full colored for their variety. Fresh berries are perishable and do not ripen after picking, so store in the refrigerator for no longer than 2 days. Rinse with cool water just before using and remove the hulls, if necessary. Berries in season have more flavor and are typically lower in cost than their out-of-season counterparts. Enjoy summer's best all year long by freezing berries at the height of their season. Then, thaw and use as desired.
