What You Need
Original recipe yields 5 servings
4 oz. (1/2 of 8-oz. pkg.) refrigerated cheese tortellini, uncooked
1/4 cup plain nonfat Greek-style yogurt
1/4 cup KRAFT Greek Vinaigrette Dressing
1/4 tsp. zest and 1 Tbsp. juice from 1 lemon
2 cups shredded rotisserie chicken
1/2 cup Kalamata olives
1 cup grape tomato es, halved
1/4 cup chopped fresh parsley

Cook pasta as directed on package, omitting salt. Rinse with cold water; drain well.
Mix yogurt, dressing, lemon zest and juice until blended.
Place pasta in large bowl. Add chicken, olives and yogurt mixture; mix lightly. Refrigerate several hours or until chilled.
Add tomatoes and parsley; mix lightly.
Pair this recipe with fresh fruit and fat-free milk for a great take-to-work lunch.
How to Shred Chicken
To easily shred cooked chicken for recipes, place the slightly cooled cooked chicken on a cutting board. Use two forks or your fingers to pull the meat lengthwise into opposite directions, separating it into long shreds.
How to Prepare Pasta for Pasta Salad
If pasta is to be used in a cold salad, rinse it under cold running water immediately after cooking to remove excess starch and prevent the pieces from sticking together. Drain thoroughly before combining with the other salad ingredients.
