Perfect for St. Patrick's Day, this salad is made with the Irish tricolor: green asparagus, white daikon radish and orange (in the form of carrots).

Original recipe yields 6 servings
1 bunch asparagus (about 12-16 ounces total), ends broken off
2 carrot s, (about 6-8 ounces total), peeled
1 daikon radish, (about 4-6 ounces), peeled
2 Tbsp. raw sunflower kernels
3/4 tsp. fresh lemon thyme
1/2 tsp. fresh lemon juice
1 Tbsp. white wine vinegar
1/2 tsp. GREY POUPON Dijon Mustard
3 Tbsp. extra virgin olive oil

Wash the vegetables carefully, and using a vegetable peeler, peel thin strips of each vegetable and combine in bowl.
Toss with the sunflower seeds.
Whisk together the remaining ingredients in a separate bowl, and then dress the salad with the mixture.
