Add 3-1/2 cups water to coffee grounds in 2-qt. pitcher; stir well to combine. Cover with plastic wrap; let stand at room temperature 12 hours.
Line fine-mesh strainer with coffee filter; place over medium bowl. Slowly pour coffee, in small batches, through filter; let stand until all the coffee is strained. Discard grounds.
Return strained coffee to pitcher. Refrigerate 2 hours or until chilled.
Add remaining water to coffee in pitcher just before serving; stir. Serve in ice-filled glasses.
For richer flavor, substitute milk or half-and–half for the 3 cups water added to the strained steeped coffee.
Pour 1 cup milk into ice cube trays, filling each section halfway. Freeze 3 hours or until firm. Pour 1 cup additional cold brewed coffee over frozen milk cubes; freeze 3 hours or until firm. Add to glasses just before filling with the chilled beverage.
Coffee grounds can be steeped in cold water up to 24 hours before straining and using as directed.
