Treat the family to a Thanksgiving-worthy sweet potato side dish—any time of year! Get out the dried cranberries and stuffing mix and let's get started.

4 sweet potatoes
1-1/2 cups apple juice
2 Tbsp. butter
1/2 cup dried cranberries
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

Let's Make It

Pre-heat oven to 350 degrees.

Wash sweet potatoes and use a fork to poke holes on the tops and bottoms.

Place in a shallow dish and bake for about 1 hour and 10 minutes.

When about 10 minutes remain on the sweet potatoes add the apple juice and the butter to a saucepan and bring to a boil.

Immediately stir in the cranberries and the stuffing mix.

Mix thoroughly, cover and remove from heat.

Slice open sweet potatoes and mash the insides.

Add the stuffing mixture to the inside of the sweet potato.

Serve immediately.
