What You Need
Original recipe yields 4 servings
1 pork tenderloin (1 lb.), cut into 4 pieces
4 slices OSCAR MAYER Bacon
1/4 cup KRAFT Zesty Italian Dressing
1 mango, chopped
1/2 cup finely chopped red peppers
1 green onion, finely chopped
1 Tbsp. chopped fresh cilantro
1 Tbsp. fresh lime juice

Press each meat piece into 3-1/2-inch medallion. Wrap bacon slice around edge of each medallion, secure with wooden toothpicks.
Heat large heavy skillet sprayed with cooking spray on high heat. Add meat; cook on medium-high heat 5 min. on each side or until done (145ºF). Meanwhile, combine remaining ingredients.
Remove and discard toothpicks from meat. Let meat stand 3 min. Serve topped with mango mixture.
How to Grill Pork Medallions
Heat grill to medium-high heat. Grill meat 4 to 5 min. on each side or until done (145ºF). Remove from grill. Let stand 3 min. before serving.
Testing for Doneness in Pork
To be sure pork is fully cooked, check the internal temperature with an instant-read meat thermometer. Insert the thermometer 2 to 2-1/2 inches into the thickest part of the meat, not touching any bones - it should read 145°F. If checking thinner pieces, such as pork chops, insert the thermometer through the side of the meat. After pork registers 145ºF, remove from heat and let it stand 3 min. before serving.
