What You Need
Original recipe yields 8 servings
2-1/2 lb. mixed bone-in chicken thighs and legs
1 onion, slivered
2 green peppers, cut into strips
1 lb. fresh mushrooms
2 cans (14.5 oz. each) diced tomatoes, undrained
1 env. (0.7 oz.) GOOD SEASONS Italian Dressing Mix
4 cups hot cooked long-grain white rice

Place chicken in slow cooker; top with fresh vegetables.
Mix tomatoes and dressing mix; pour over vegetables. Cover with lid. Cook on LOW 6 to 8 hours (or on HIGH 4 to 5 hours).
Serve over rice.
Instead of cooking the rice separately, stir the uncooked rice into ingredients in slow cooker after the chicken is done, and about 25 min. before ready to serve the chicken. Continue cooking, covered, until rice is tender.
