Heat oven to 400°F.
Mix cracker crumbs and butter until blended; press onto bottom and 1 inch up side of 9-inch springform pan sprayed with cooking spray. Bake 4 to 5 min. or until lightly browned. Remove from oven; reduce oven temperature to 350°F.
Cook and stir bacon and red peppers in large skillet on medium heat until bacon is crisp. Remove from skillet, reserving drippings in skillet. Add onions to drippings in skillet; cook and stir until crisp-tender. Add spinach; cook 4 min. or just until wilted.
Blend eggs, milk, cheese, flour and black pepper in blender until well blended. Add spinach mixture; blend until smooth. Stir in bacon mixture; pour into crust.
Bake 30 to 35 min. or until knife inserted in center comes out clean. Cool 15 min. Run knife around rim of pan to loosen tart; remove rim before serving.
For a delightful brunch idea, serve this tart with a seasonal fruit salad.
Garnish with roasted pepper or pimiento strips just before serving.
