Heat oven to 350ºF.
Mix first 4 ingredients.
Spoon into shallow baking dish; drizzle with dressing.
Bake 30 to 35 min. or until heated through. Serve with crackers and vegetable dippers.
Prepare using crumbled feta cheese with Peppercorn.
Mix dip ingredients as directed. Refrigerate up to 24 hours. When ready to serve, bake as directed.
To serve this flavorful dip in a bread shell, cut thin slice off top of bread loaf. Remove center of loaf, leaving 1-inch-thick shell. Reserve removed bread for another use, such as to make croutons or bread crumbs. For added flavor, prepare the bread shell using a loaf of olive bread.
Serve this colorful dip at your next get-together. The spinach and carrots team up to provide an excellent source of vitamin A while the peppers provide a good source of vitamin C.
