What You Need
Original recipe yields 6 servings
3 Tbsp. olive oil, divided
1 onion, chopped
2 cloves garlic, minced
2 cans (15 oz. each) chickpeas (garbanzo beans), rinsed
2 plum tomatoes, seeded, chopped
1/4 cup shredded fresh basil
1/2 cup KRAFT Shredded Parmesan Cheese
1/4 tsp. ground black pepper

Heat 2 Tbsp. oil in large skillet on medium heat. Add onions and garlic; cook and stir 5 min. or until onions are crisp-tender.
Add beans to skillet; cook 5 min. or until heated through, stirring frequently. Spoon onto serving plate.
Top with tomatoes and basil. Drizzle with remaining oil; top with cheese and pepper.
For a refreshing ending, serve with 1 cup of your favorite fresh fruit, such as mixed berries or cantaloupe chunks.
