Place potatoes on microwaveable plate; prick each in several places with fork. Microwave on HIGH 8 to 10 min. or until tender, turning and rearranging every 3 min. Cool 10 min.
Make 7 to 9 diagonal cuts in top of each potato, cutting about 3/4 of the way into potato. Place, cut sides up, on baking sheet sprayed with cooking spray. Gently spread slices of 1 potato slightly apart; brush with 1 Tbsp. dressing. Repeat with remaining potatoes and dressing.
Bake 15 to 18 min. or until potatoes are lightly browned. Top with cheese; bake 1 to 2 min. or until melted. Sprinkle with onions.
Use Your Grill
Heat grill to medium heat. Partially slice, then brush microwaved potatoes with dressing as directed; wrap individually in foil. Grill 6 to 8 min. or until tender. Carefully remove foil. Top potatoes with cheese and onions.
The potatoes can be microwaved ahead of time. Let stand at room temperature up to 1 hour before partially slicing and continuing as directed.

How to Easily Cut the Potatoes Into Fans
Place potatoes, 1 at a time, on wooden spoon; cut crosswise into thin slices. The spoon will keep your knife from slicing all the way through the potato. (You don’t want to cut more than 3/4 of the way through potato - the slices should still hold together at each potato’s base.)
