Spread cactus with beans; top each with 1 Tbsp. tomatillo mixture. Cover with onions and cheese. Serve with remaining tomatillo mixture.

Look for packaged cleaned cactus paddles in the produce section of Hispanic grocery stores.
Cactus paddles are done when the color turns from bright green to opaque.
