What You Need
Original recipe yields 12 servings
3 cups water
1 cup fresh cilantro
1 cup fresh parsley
2 cloves garlic
1 WYLER'S Instant Bouillon Chicken Flavored Cube
1 Tbsp. oil
1-1/2 cups long-grain white rice, uncooked
1 small onion, chopped
4 cups grape tomatoes, cut in half
1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese

Let's Make It
Blend first 5 ingredients in blender until smooth; set aside.
Heat oil in large saucepan on medium heat. Add rice and onions; cook and stir 3 min. Stir in herb puree. Bring to boil; cover. Simmer on low heat 20 min. or until liquid is absorbed; cool 5 min.
Fluff rice with fork. Stir in tomatoes; top with cheese.
Substitute 4 chopped plum tomatoes for the grape tomatoes.
Prepare rice mixture as directed, but do not top with cheese. Cool to room temperature. Top with cheese just before serving.
