Spoon onto lettuce; roll up.
Mix additional 1/4 cup dressing and 2 Tbsp. peanut butter with 1 Tbsp. water. Serve with the spring rolls.
For added flavor, season meat with 1/2 tsp. each crushed red pepper and grated fresh ginger before browning.
Prepare using leaf or Boston lettuce leaves.
