Bring 3/4 cup water to boil. Add to 1 pkg. gelatin mix in small bowl; stir at least 2 min. until completely dissolved. Pour 1/4 cup into 6-cup mold or bowl sprayed with cooking spray. Refrigerate 15 min. or until slightly thickened. Meanwhile, peel mango; cut into 1/8-inch-thick slices. Arrange on bottom of bowl. Slowly pour remaining dissolved gelatin over mangos. Refrigerate 15 min. or until gelatin is set but not firm.
Meanwhile, bring remaining water to boil. Add to remaining 2 pkg. gelatin mix in medium bowl; stir at least 2 min. until completely dissolved. Stir in evaporated milk. Refrigerate 30 min. or until slightly thickened; pour over strawberry gelatin.
Refrigerate 4 hours or until firm. Unmold onto serving plate just before serving. Top with COOL WHIP. Garnish with fresh mint, if desired.
Dessert can be refrigerated overnight before serving the next day.
How to Unmold Gelatin
To unmold chilled dessert, dip mold or bowl in warm water, just to rim, for 15 sec. Lift mold from water; gently pull gelatin from edge of mold with moistened fingers. Place moistened serving plate on top of mold. Invert mold and plate, then shake to loosen gelatin. Gently remove mold. If mold is still not ready, place in warm water for another 5 sec.
Prepare using 1 drained 15-oz. can mangos.
