Keep these mini ice cream treats in your freezer for a quick snack or dessert.
What You Need
Original recipe yields 15 servings
2 cups vanilla ice cream, slightly softened
1 cup chopped PLANTERS COCKTAIL Peanuts, divided
30 chocolate chip cookies (2 inch)

Let's Make It
Mix ice cream and 1/2 cup nuts. Freeze 30 min. or until firm enough to hold its shape.
Spoon about 2 Tbsp. ice cream mixture onto bottom of each of 15 cookies. Cover with remaining cookies to make sandwiches.
Roll edges in remaining nuts. Freeze 2 hours or until firm.
Prepare using your favorite flat-bottomed cookies.
For Single Serve
Prepare using 2 Tbsp. ice cream, 1 Tbsp. chopped PLANTERS Peanuts and 2 cookies.
For Longer Storage
Wrap sandwiches individually in plastic wrap or foil; place in freezer-weight resealable plastic bag. Freeze up to 2 weeks.
