Beat egg in small microwaveable bowl. Stir in bacon and peppers. Microwave on HIGH 1 min. or until egg is set and no visible liquid remains, stirring every 30 sec.
Place tortilla in skillet; spoon egg mixture onto half the tortilla. Top with cheese; cook on medium heat 2 to 3 min. or until bottom of tortilla is lightly browned and cheese is melted.
Fold tortilla in half to serve.
Prepare as directed, using a whole wheat tortilla and/or substituting 1/4 cup cholesterol-free egg product for the beaten fresh egg.
Serve topped with TACO BELL® Thick & Chunky Salsa or your favorite hot pepper sauce.
