Use vanilla wafers to make these delightful cookie cups. Fill with a luscious blend of softened ice cream and the gelatin flavor of your choice.
What You Need
Original recipe yields 8 servings
1-1/4 cups boiling water
1 pkg. (4-serving size) JELL-O Gelatin, any flavor
1 pt. (2 cups) vanilla ice cream, slightly softened
16 vanilla wafers, divided
1/2 cup thawed COOL WHIP Whipped Topping

Let's Make It
Stir boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved. Add ice cream; stir until melted.
Place 1 wafer in each of 8 small cups. Cover evenly with the gelatin mixture.
Refrigerate 30 to 45 minutes or until firm. Top with the whipped topping and remaining 8 wafers just before serving. Store leftover dessert cups in refrigerator.
Melt 1 oz. BAKER'S Semi-Sweet Baking Chocolate as directed on package. Dip half of each of the 8 reserved wafers in chocolate, then in colored sprinkles. Refrigerate until chocolate is firm before using to garnish the dessert cups.
