What's so great about this taco recipe is how smoothly the flavors of beans, salsa, peppers, brown rice and cheese come together. It's easy to make, too!
What You Need
Original recipe yields 4 servings
1 can (15 oz.) black beans, rinsed
1/3 cup TACO BELL® Thick & Chunky Salsa
1 green pepper, chopped
1 cup water
1 cup instant brown rice, uncooked
8 flour tortillas (6 inch)
1 cup KRAFT Shredded Cheddar Cheese

Let's Make It
Mix beans, salsa and peppers in medium saucepan; stir in water. Bring to boil on medium-high heat.
Stir in rice; cover. Cook on medium-low heat 5 min. Remove from heat; stir. Let stand, covered, 5 min.
Spoon rice mixture evenly onto tortillas; sprinkle with cheese. Fold tortillas in half to serve.
Toss together 1 cup sliced strawberries, 1 sliced banana and 1 cup blueberries for an easy, colorful fruit salad to accent this meatless main dish.
Sprinkle with 2 Tbsp. chopped fresh cilantro.
