Original recipe yields 8 servings
1/4 cup KRAFT Zesty Italian Dressing
1 small onion, finely chopped
1 can (29 oz.) pumpkin
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
3 Tbsp. brown sugar
1/2 tsp. ground red pepper (cayenne)
2 cups water
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed

Heat dressing in large saucepan on medium heat. Add onions; cook and stir 5 to 7 min. or until crisp-tender.
Add pumpkin, chicken broth, sugar and red pepper; mix well. Stir in water. Bring to boil. Reduce heat to medium-low.
Stir in cream cheese; cook 3 to 5 min. or until cream cheese is completely melted and mixture is well blended, stirring constantly with whisk.
For extra flavor, sprinkle each bowl of soup with ground nutmeg, ground red pepper (cayenne), chopped fresh cilantro or parsley before serving.
This satisfying soup can be prepared ahead of time. Cool, then refrigerate up to 24 hours. If soup is too thick, thin with chicken stock or additional water as necessary. Reheat in the microwave or on top of the stove just before serving.
