Cut gelatin into 8 (2-inch) cubes, then cut each cube into 12 smaller cubes. Spoon 1/4 cup of the tapioca into each of 8 parfait glasses; top each with 6 gelatin cubes. Repeat both layers. Serve immediately or cover and refrigerate until ready to serve.
