Follow this Sofrito Recipe which takes only 15 minutes. Combine chili peppers, garlic, recao leaves and other fresh ingredients for tasty homemade sofrito.
What You Need
Original recipe yields 16 servings
1 yellow onion, cut into chunks
2 green sweet banana peppers, halved, seeded
6 sweet chili peppers, halved, seeded
6 cloves garlic, peeled
6 recao leaves
1/2 cup loosely packed fresh cilantro leaves
1/2 tsp. dried oregano leaves

Process ingredients in food processor until smooth.
This sofrito sauce can be frozen for later use. Spoon 2 Tbsp. prepared sauce into each of 16 sections of ice cube tray. Freeze until firm. Remove sofrito cubes from tray; place in freezer-weight resealable plastic bag. Store up to 1 year before using as desired. No need to thaw first.
Use Your Blender
If using a blender instead of the food processor, add 2 Tbsp. oil or water to ingredients in blender before blending until smooth.
Prepare as directed, omitting the recao leaves, increasing the cilantro to 1 cup, and/or substituting 1 large chopped green pepper for the banana and chili peppers.
Feel good about seasoning soups, sauces or meat dishes with this low-calorie, low-sodium, fat-free sauce. The chili peppers provide an excellent source of vitamin C.
