What You Need
Original recipe yields 8 servings
3/4 cup yellow cornmeal
1/2 cup flour
1/2 cup BAKER'S ANGEL FLAKE Coconut
3 Tbsp. dark brown sugar
2 tsp. CALUMET Baking Powder
1/2 tsp. salt
1/2 cup milk
1/2 cup raisins
1 egg, beaten
1 tsp. ground cinnamon
1 tsp. freshly grated nutmeg

Let's Make It
Heat oven to 425°F.
Mix first 6 ingredients in large bowl. Stir in remaining ingredients until well blended.
Pour into 9-inch pie plate sprayed with cooking spray.
Bake 15 min. or until lightly browned.
Substitute canned unsweetened coconut milk for the 2% milk.
For a crisper more golden crust, bake in well-greased preheated cast iron skillet.
Substitute 1/2 tsp. ground nutmeg for the freshly grated nutmeg.
