2/3 cup powdered sugar
1 Tbsp. lemon juice
1 tsp. vanilla

Place ricotta, sugar, lemon juice and vanilla in food processor container; cover. Process until smooth. Spoon into medium bowl.

Add whipped topping; stir with wire whisk until well blended. Cover.

Refrigerate at least 1 hour before serving.

E-Z Fruit Shortcakes
Prepare as directed. Spoon over pound cake slices and assorted fresh berries. Garnish with small dollops of additional thawed COOL WHIP Whipped Topping and fresh mint sprigs just before serving.

Tiramisu Cream
Prepare as directed, omitting lemon juice and adding 1 Tbsp. MAXWELL HOUSE Instant Coffee and 1/8 tsp. ground cinnamon with the ricotta. Spoon ricotta mixture into dessert dishes or small coffee cups. Garnish each with a small dollop of additional thawed COOL WHIP Whipped Topping and grated BAKER'S Semi-Sweet Baking Chocolate. Prepare as directed, substituting orange juice for the lemon juice and adding 1 tsp. grated orange peel. Gently stir in 1/2 cup chopped dried fruit before refrigerating.
