This meatless pasta entrée takes advantage of ripe summer tomatoes. Spinach, olive oil, green onions and feta cheese add great color and zesty flavor.

8 oz. mostaccioli, uncooked
3 cups chopped tomatoes
4 cups fresh spinach, stems removed, washed
1/2 cup chopped green onion s
2 Tbsp. olive oil
1 pkg. (8 oz.) ATHENOS Feta Cheese with Basil & Tomato, crumbled

Cook pasta as directed on package; drain. Return to pan.

Add tomatoes, spinach, onions and oil; mix lightly. Cook 2 minutes or until spinach is wilted and mixture is thoroughly heated, stirring occasionally.

Add feta cheese; cook 1 minute. Stir.
