Broil 2 min. or until cheese is melted. Roll up.
Substitute 6 split sandwich rolls for the tortillas. Place bottom halves of rolls, cut sides up, on baking sheet; top with roasted vegetables and cheese. Broil as directed. Cover with tops of rolls.
